What year(s) did they have episodes on a beach?

Seems to me that it was within all three years of the 80s syndicated version.  The original never left the studio (until the last Las Vegas season) and the current version only took a trip to New York and the Hammerstein Ballroom in 1999, I believe.

Davidson HS: 1986-87 and 1987-88 they went to Hollywood Florida, and 1988-89 they went to Paradise Island, Bahamas. For the Bahamas trip, Davidson bragged about how they were the first US game show to travel to foreign soil at the time(J! did the 1997 INternational Tourney from Stockholm). The show also did two weeks at Radio City Music Hall in NYC in November 1987. Davidson announced on the show during the first season that the show would be doing a week of shows in Vail, Colorado in season two, but that never materialized.
