I think of your question this way: If I was making a two-hour clip special, what would I include? The earliest surviving footage is obvious (episode three exists in black and white) You'd also want to showcase the star power of the series, including before-they-were-BIG-stars players like Letterman or Billy Crystal (his record-setting run another obvious choice). Despite Lemon's misgivings, I consider that 4-tiebreaker Duncan/Russell game to be just ridiculous enough to include. Put in some big wins, of course, and whatever off-the-wall stuff you can find, Many of the ones you mentioned in your initial post are good examples. And definitely Shatner playing solo.
