Yes, there's a picture of them in "Come on Down" by Jefferson Graham. And to further illustrate why Chris' guess was most likely and eventually proven right - the thing being displayed on them was simply the chyron feed.

Other than the set size & magic toaster, how did SP feel "cheap?"  They were giving away higher jackpots, had neon all over the set, computerized graphics and exponentially more sound effects than the 3 used on P+.  

P+ even used slide projectors everywhere!
