Hypothetically, if a woman were to go on Jeopardy! when she was only two months pregnant, and end up being nine months pregnant later in her reign (possibly due to the summer break), would Jeopardy! keep taping without her and invite her back after she's had the baby?

Probably. In the only Darrow "Dream House" on the circuit, this very event occurs, and Mike announces that the couple will continue whenever they're able. It's only logical. Wasn't there a champ on PYL or some other show that missed their flight or was sick, only to come back later in the week (taping session)?

Yep, it did indeed happen on PYL. Don't know why she didn't show up next episode.
Something similar happened on Card Sharks in 1979, when a champ suddenly took ill. (And I think Password Plus had it happen as well.)

I seem to remember someone on TTD 90 leaving mid-game, with the show promising to bring them back later... of course, they were off the air to soon for it to happen.

Apparently she missed her flight, and got in for the second ep taped. They had three new contestants on the ep she missed. That ep (the one she missed) is the one where Add-A-One was hit for $10,000 for a total of $14,000.

There was an incidence on the $100K Pyramid where a contestant couldn't play for a week because she knew Terry Lester personally, and he was booked for that week. That contestant, of course, was Kief Ferrendini.

It was the challenger, not the champion, who took ill. In that case, the champion won the match by default and the challenger was invited back when he got better.
Come to think of it, toward the end of the NBC run, CS did have a champion who expected a baby girl very soon. They postponed taping for a week and a half while she went into labor.

Surprised taping just stopped for that long; guess they taped far enough ahead for it not to be a big issue.

One couple couldn't come back for some reason, and the other team with no such responsibility inherited the win.

I saw individual players do that on SP and P+, and I saw a family sit out for a week or so on FF because of illness. (I think it was a member of the team and not just an outside family member.)

There was an episode of Dawson Feud that had an elderly family member. While he seemed fine during the first round, during commercial break he suddenly fell very ill. They came back from commercial and the guy was seated on a stool. Richard commented that he wasn't feeling well, and when he attempted to get an answer from the man, he clearly looked out of it. Richard demanded "don't give him a strike!" and went to the next family member.

See...I had always imagined a game show spin on the infamous Maury Povich DNA shows.
I figured for a majority of the time, the baby mama has no clue who da baby daddy is, so Maury ends up testing 5, 6, 7 men for one child. So, find out who the real baby daddy is, then mix him in a lineup of about 20 other men to play a game where the only real prize would go to the poor child whose life is being scarred by their parents transgressions.
The mechanics of the game I haven't quite worked out yet, but the opening of the show would go something....LIKE THIS!
"This is Yolanda from Baltimore, Maryland. She doesn't know it yet, but the father of her child is somewhere in this room. Problem is, she doesn't remember who the father could be. Tonight, Yolanda will have a chance to win a college trust fund for her child valued at $250,000, as from NEW YORK we play America's newest paternity game sensation...WHO'S YO' DADDY! With your host, Maury Povich!"
Now THAT's television....of the lowest common denominator, but still television. I'd wager it would get better ratings than "Quarterlife"
